I LOVE
YAM PASTE. I LOVE ANYTHING THATS GOT TO DO WITH
YAM.
be it yam snowshake, yam cakes, yam kuehs, yam whatever.
AND making
Yam Paste, otherwise locally known as
'Orh Nee', is actually very easy. :D
(can serve up to 6)
INGREDIENTS:1 regular Yam
(peeled and chopped into cubes)1/2 cup Sugar
(white/ coarse; taste & adjust according to personal preferences)
1/2 cup Gingko Nuts
(shelled, as many as you like also can)4 tbs Olive/ Canola/ Sunflower Oil
1/2 cup Water
(more/less according to preference on texture)If anyone out there ever forgot/ don't know yam and gingko nuts look like.

DIRECTIONS:1) Boil the yam cubes for approx. 10mins until tender
2) Drain the yam cubes and after its cooled, mash it into a paste using the back of fork
3) Heat the oil in a pan
4) Pour in the yam paste and stir it
5) Add in sugar and continue to stir
6) Add water gradually and keep stirring until desired texture and taste is achieved
EQUIPMENTS:1) 1 regular pan
2) 1 fork
3) 1 wooden spatula
RECIPE VARIATIONS:- You may add in pumpkin cubes with the gingko nuts too, just boil the pumpkin cubes with the yam cubes and side it aside.
- For additional fragrance, you may also add shallots while fying of oil.
- If you have a really sweet tooth, add in coconut milk to the mixture while heated on the pan.
The recipe stated above is studied and modified rapidly by
yours truly and it is usable and no health hazards. :)
